Gluten Free Pesto & Ranch Chicken Crock Pot Recipe
Ingredients:
Pack of chicken thighs
1 (8 ounce) jar of pesto (although I never use the whole jar)
1 (0.25 ounce) package ranch dressing mix
2-3 cups chicken stock
Directions:
Clean chicken thighs and place them in the bottom of the crock pot. I have used chicken breasts for this recipe before but prefer thighs.
Take pesto and spread it over chicken. The more you use, the stronger it is. I usually end up using 3/4th of the jar.
Sprinkle on ranch dressing mix.
Pour chicken stock over the top. Mix the stock into the pesto and ranch. Cook it on high for 3-4 hours or low for 6-8 hours. Don’t overcook. Thighs will shrivel.
Put the chicken over top of rice or just eat it plain. Either way, its a simply delicious meal! Enjoy!
