So what is gluten cross-contamination?
When a gluten free food becomes contaminated with gluten —enough gluten to make someone on a gluten free diet, sick — that’s cross-contamination. Cross-contamination (or cross-contact, as it is known in the food industry) can occur in a variety of different places, including your own kitchen. It also can occur in packaged foods … even those that say “gluten free” right on them. Some people react more frequently than others to gluten cross-contamination. But even if you’re on the sensitive side, it’s still possible to protect yourself against most cross-contamination.
